We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of an omelet. And then we brought in a food scientist to review their work. Which omelet was the best?

Notice how the amateur cracked the egg on the edge of the bowl, while the professional cracked it on a FLAT surface, to ensure no shell in the bowl. It's the little things...

The egg of an omelette needs to be fully cooked. I do this by mixing ingredients before cooking or by adding ingredients once the egg is cooked on both sides. Raw egg can make people sick, so please do not add ingredients when one side is not fully cooked and then fold. Without realizing, you might serve raw egg. Also, adding a small amount of oil to both the pan and the egg mixture will help the egg fully cook without flipping. The pan also makes a big difference in preventing the sticking that can ruin a great omelette. I've made this mistake on many occasions. Also, I don't know if anyone else has noticed, but I find it's best to keep the heat low to medium and wait for the egg mixture to solidify so that it doesn't burn. Too much heat can increase the likelihood of a bad omelette, especially on the first one when the pan is still adjusting to the temperature.

I usually put bacon inside of a diner-style omelette and top it with some delicious ricotta cheese mixture. I add parsley, salt, pepper, parmesan cheese, and mozeralla cheese in with the ricotta cheese. It tastes great. Another good option would be cottage cheese instead of ricotta.

I love how the chef make a "French omelette" where she visibly never ate a real french omelette. First, the omelette should be baveuse. Then why is her omelette green? She used too much herbs. The cheese and the muchrooms should be added in the egg mixture and finaly... WHERE S THE MEAT? where s the pork lard in the recipe?

I think a good chef is someone that can cook something delicious with all the ingredients present and not some extra and fancy stuff like special cheese... If ingredients of the same type but a different sort need a special preperation, then you should learn how to get the same delicious result with the nonfancy ingredient. I think they should show what they can create when everybody gets the same ingredients.

Wait - the food scientist said that foods with more moisture make the omelet soggy, then proceeded to say that the higher moisture cheese was a better choice. I think she is just trying to make it look like level 3 is better than everybody.
