Try cooking a steak underneath the chimney. Light a small amount of lump (very important it’s lump!!!) you might need to add newspaper 2 or 3 times to get it going. Small amounts of lump are harder to light. Pat your steak dry, season, shake chimney to get rid of any ash or small lump, set chimney directly on top of the steak. Check it after a minute. Flip once you get a good seat. Set grate on top of chimney. Insert probe thermometer into steak, cover with a metal bowl (or get a dome lid thing) flip as often as you feel necessary, depending on thickness and temp is steak. It might even cook under the chimney. Again, it’s important to use a small amount of charcoal. It’ll be super hot at the bottom, but you don’t want it scorching the steak after the sear.

Why not combine the two? Use a chimney with veggie oil soaked newspaper on the bottom then pour the top of the charcoal with lighter fluid. Best of both worlds. Btw, using lighter fluid to start charcoal doesn't leave a bad taste behind. That's total BS. Also, everything is made of 'chemicals' dumbass.

Hi I have a problem with using 14" griller. The charcoal dies out after closing the lid, even though I leave the vents full open

when you close your lid, there are holes on the lid itself and there should be some on the bottom part of the grill as well (not under the grill, but near the handle, like a slider). if it doesn't, get a new grill. there has to be an oxygen feed from the front bottom to the lid to keep the coals alive. the more open the holes, the more oxygen which makes it hotter and die faster, so close'em a bit if you notice they die too fast, but never seal). a closed lid is usually good for smoking and cooking at a fixed temp (might take some practice, just fidget with the holes and use a 3rd party thermometer until you get the temps you want). worth it to buy'em. I've smoked some good brisket this way, got the smoke ring and all. also note that lump wood dies pretty quick anyway, use corn meal briquettes for long period cooking (they last about 2 hours). lastly, don't be afraid of those giant bags of kingsford, as long as it says cornmeal on them x) pricy maybe, but they keep good and long.

This was great, thanks, I've been looking for "barbecue charcoal tips" for a while now, and I think this has helped. Ever heard of - Ariafan Barbecue Babassu - (do a google search ) ? Ive heard some super things about it and my buddy got amazing results with it.

Another good method for starting charcoal if you only want to light five or six pieces (for low and slow on a small grill) is to lay them in the fire of a small portable stove for a bit less than a minute on both sides. This will quickly light the entire surface of the charcoal and avoid the taste of half lit coals. Putting less charcoal in two separate charcoal chimneys will give you more coals without the bottom burning away before the top is ready.

Burning that news paper probably defeats the whole no chemical aspect... I used to use leaves in my charcoal starter when I ran out of paper and that works pretty damn well actually.

Marc Tatum Actually newspaper ink has been made with soy since about the 70's. Not toxic for lighting up your charcoal. Happy grilling!

+TheSpeedholic Both have their uses. I prefer hardwood briquettes, but lump is better for things such as caveman steak (no ash) and for extreme heat because of less ash and better air flow, but briquettes are perfect for medium heat and long cooks requiring steady and predictable heat. Like screw drivers, one needs the right fuel for the right job and know how to use it. :)

Lump charcoal is better than briquettes for four reasons: First, it makes your food taste better; second, it burns hotter; third, it's cheaper if you buy the big 40 lb bag, and fourth, it's more versatile - use the small pieces for burgers and dogs, and the large chunks for food that takes longer to cook, like pizza or a thick tri-tip.

I know Briquettes are better... But lump charcoal is way smaller and this is normal charcoal cannot be... Basically, it is the best for camp stoves.
