@Will Anderson just because someone bbqs hotdogs and burgers every week doesnt make them a grill master Imo a true grill master, is one who walks up to an unfamiliar grill,pit whatever and consistently bangs out good food

In my humble opinion anyone who bbqs on the regular is a Grill Master. This gentleman is very detail oriented and a forward thinker which is a must for any Grill Master. Experimenting is the key. Try not to walk away from the grill too often. Wrapping up in foil causes the meat to cook inside to out evenly with controlled heat. Trying with Pork, Beef and Poultry in various preparations modes is key.

The only thing I don't understand is every time I've had meat over unheated coals, it left a terrible taste. Because while the coals are heating, the smoke has an awful flavor before they turn white.

I usually use a starter cube at the beginning of the snake. Most of the time the brisket has to be over 200 up to 205 to be optimal tender(when probed with an istant read thermometer it should feel like room temp butter). If necessary you can extend the snake from the end and passed where you began to extend your cook.

Do you get some chemical taste from the briquets continually starting up? Save those nickels and dimes and get a pellet smoker. A small one can handle two briskets or four baby racks, then feed the freezer.

There's a reason they say to wait until the charcoal is grey, that's because all of the harmful chemicals have been burnt. You should never do what this guy has done by putting meat on a BBQ with unburnt charcoal

That only applies for industrial charcoal and/or if you use lighter fluid. Natural charcoal without industrial processing can be used if it’s still partially black (not burnt) and it’s completely safe, although it’s not very practical except for these cases
